Honey-Mustard-Balsamic Baked Chicken

Chicken Breast, no skin, 370 gramsYellow Mustard, 1 tsp or 1 packet(remove)balsamic vinegar, 1 tablespoon(remove)Honey, 1 tbsp(remove)Sat and pepper to taste
1) Poach chicken breasts in water for 15 minutes over low heat
2) Mix mustard powder, balsamic vinegar and honey.
3) Remove chicken from water and pat dry.
4) Cut a pocket into the chicken breast from the side
5) Spray an oven dish with low cal vegetable spray.
6) Spoon 1 teaspoon of the mustard mixture into the pockets and the rest over the chicken
7) Season to taste with pepper and salt
8) Cover with aluminium foil and bake at 180 degrees celsius pre-heated oven for 30 minutes.
9) Remove foil and bake uncovered for another 15 minutes.
10) Serves with rice or a salad
