4 corn tortillas2 cups pinto beans120 grams salsa 100 grams ricotta1 cup Red Ripe Tomatoes, chopped 200 grams chopped lettuce10 grams Onions1 tbsp chopped Fresh Chives 1 gram salt1 dash black pepper
Preheat the oven to 375 degrees Fahrenheit.
Place the pinto beans in a bowl, add the salsa, salt, black pepper, chives and mash with a fork until well combined. Heat in microwave, oven or stove.
Place tortillas on a baking sheet, and place in oven for five minutes, until slightly crispy. Remove from oven and divide bean-salsa mixture among the tortillas. Top with cheese and mix of lettuce, onions, tomatoes and chives.
Serve immediately.
