Zucchini Souffle

Ingredients
4 eggs, slightly beaten1-1/2 c chopped onion1 clove garlic (minced)1 t. salt, dash pepper1/2 t. oregano1/2 c. parmesan cheese2 tsp. chopped parsley1 c. Bisquick4 c. shredded zucchini1/2 c. oil ( I use 1/4 c. canola oil)
Directions
mix all ingredients. Pour into 13" x 9" greased pan. Bake at 350 degrees for 30 minutes or until well browned.

Note: this "pie" formes its own crust!

Serving Size: makes one 13x9" casserole
