Cream cheese, almond flour, stevia, vanilla, eggs, butter
Preheat oven to 350. Melt the butter and blend into the almond flour (either buy almond meal pre-ground, or grind yourself). I added a few pecans to the flour for richness. Once you have a nice consistency, press the mixture into 8 lined muffin cups. You will get about a tablespoon of "crust" in each cup. Toast this for a few minutes in the oven to dry it out and get a bit more crunch. Blend the rest of the ingredients with your hand mixer. Divide into muffin cups and bake for 20-25 minutes, or until

You're right! I'm sorry. I posted this when I was still getting used to the recipe feature, and did it incorrectly. I used most of a 12 oz package of cream cheese (more like 10 oz.), 1/3 c almond flour, 1 egg, 1 T butter, 1 t vanilla, and 1 packet Stevia (see note - you may want to use 2). Sorry!
