Chinese Buffet - Fresh Green Beans

2 1/2 pounds fresh green beans, trimmed & blanched3 tbs minced garlic1/2 tsp crushed red pepper flakes (opt)2 1/2 tbs sesame oil (or olive oil)5 tbs soy sauce2 1/2 tbs rice vinegar2 tbs brown sugar, packed2 tsp black pepper (or to taste)2 tsp salt (or to taste)1 tsp cornstarch (mixed with water to thicken sauce, opt)1 tbs sesame seeds (or sliced almonds, opt)
Blanch trimmed (ends cut off) green beans in a pot of boiling salted water about 3 minutes (just crisp tender) & plunge into an ice bath to cool completely. Drain beans well & pat dry.
Heat sesame oil in a large skillet; add in garlic & chili flakes (if using) stir fry 1 minute.
Add in beans; cook additional 2 minutes.
Add in soy sauce, rice vinegar, brown sugar, black pepper, & salt, cook until sauce reduces & slightly coats the beans. (About 1 - 2 minutes)
If you want a thicker sauce add in the cornstarch/water mixture towards the end of cooking time.
Add in sesame seeds (or almonds), toss to coat.

I LOVE these beans! But I didn't use the soy sauce or corn starch or Brown sugar. I blanched my beans, heated the oil, put in 3 clove of finely copped garlic, 1/2 sm onion and beans. Sprinkled with Mrs. Wages Spicy, stirred every min. for about 5 min. served hot right onto plate . . . DELISH - 2/20/13
