lemony chicken salad

Ingredients
2 small shallots (or one large), minced2/3 C uncooked rice1 tsp salt8 oz. cooked, skinless chicken breast (diced)1/2 c fat-free mayonnaise1TSP lemon zest3 TBS fresh lemon juice1 tsp sugar1/2 tsp black pepper
Directions
Coat a non stick pot with cooking spray: heat over medium heat. Add shallots: cook until softened, stirring, about 1 minute. Add rice, salt and appropriate amount of water to cook rice according to manufacturer's directions. Cool

In a large bowl, toss together rice, scallions, and remaining ingredients. Yields about 1 C per serving

    This is a weight watcher's recipe I have used in the past. It is a great, filling salad on a hot day for lunch. The longer it sits the better the flavors combine. I'm a little lazy and often by rotassarie chicken and premade brown rice to save time in the ktichen. - 8/5/12
