Ingredients
1 can black beans, drained and rinsed well3/4 cup fresh or frozen corn kernels1 cup leftover cooked wild rice2 T roughly chopped raw onion1-3 cloves minced garlic2 T seasoned rice vinegar
Directions
Lightly onion and garlic over low heat until translucent and sweet. (use a touch of water in your non-stick pan to avoid adding oils)

Pop all the ingredients into a bowl with lid and gently shake until combined.
