Crazy zucchini muffins

Ingredients

2 cups white flour1/2 cup granulated sugar 1 tablespoon baking powder1/4 cup ground flax seed1 cup dried cranberry trail mix3/4 cup Kifir low fat plain yogurt1/4 cup canola oil1/4 cup egg substitute2 cups shredded fresh zucchini
In a large bowl, mix first 5 ingredients well.
In a separate bowl, combine kefir, oil, egg substitute and shredded zucchini.
Mix wet ingredients into dry ingredients and stir until just mixed.
Scoop into muffin tins prepared with baking cups or cooking spray.
Bake in a pre-heated 400 degree oven for 25 minutes or until the tops of the muffins are browned.
Serving Size: Makes 12 muffins
