Ingredients
2 cups water1 cup uncooked brown rice or white rice1 cup finely chopped yellow onion1/2 cup finely chopped green bell pepper1/2 cup frozen green peas, thawed4 ounces extra lean, reduced-sodium ham, thinly sliced and chopped1/4 cup chopped fresh parsley3 ounces shredded reduced-fat Cheddar cheese (3/4 cup)1 teaspoon mrs. dash1teaspoon cayenne pepperblack pepper to taste
Directions
1. Bring water to a boil in a medium saucepan. Add rice, onion, and bell pepper. Stir, cover, lower heat, and cook for 20 minutes.

2. Remove rice from heat, stir in remaining ingredients, cover, and let stand 3 minutes to allow flavors to develop and cheese to melt.

    The rice needs more like 40 minutes of cook time, otherwise this is a tasty dish. I think the ham can be increased by half without any detriment to the recipe. - 11/19/19
