Ingredients
1 boneless, skinless chicken breastFat Free Cooking Spray, Butter Flavor1 (10oz) can diced tomatoes with green chiles1 (4.5 oz) can diced green chiles, undrained1 cup chopped onions1 cup chopped celery1 cup thinly sliced carrots1 tsp Garlic powder8 Corn Tortillas, medium (approx 6" dia)Crushed Red Pepper flakes, 1/4 tsp or less
Directions
Bake chicken breast in 425 degree oven for 15 minutes or until cooked through, shred with a fork.

While chicken is baking, cut onion, celery, and carrots.

In a skillet sprayed with non-fat cooking spray, combine chicken, tomatoes, and chiles; over medium-high heat; heat through.

In a separate skillet sprayed with non-fat cooking spray, combine onions, celery, carrots and garlic powder; stir-fry over med-high heat until carrots are tender-crisp.

Warm the tortillas until flexible; serve.

Makes 4 servings (2 tortillas each)

    Wow! This is SOOoooooo Good! So fast and easy to make and delicious... my whole family ate it up! I will definitely make it again and maybe add a few more things like olives, & red peppers... but it is so yummy!!! I added the option of fat free sour cream and no one even really wanted it!
