*Sugarless* Muffins

Ingredients

1 C. chopped dates1/2 C.raisins1/2 C. chopped prunes1 C. water1/4 C. plain yogurt or (1/4 C canola oil, or 1/2 C. margarine)1/4 tsp. salt1/2 C. Eggbeaters, or (2 Eggs beaten )1 tsp. baking soda1 C. flour, whole grain1/2 C. chopped walnuts (optional)1 tsp. vanilla extract
Cook and boil the dates, raisins, prunes and water for 5 minutes.
Mix the dry ingredients together, then add hot mixture into them and put in greased muffin tins or the disposable aluminum muffin cups. These muffins don't come away from the paper cups very well. Bake at 350 degrees for 15 to 20 minutes. Makes 12
You can alternately use canola oil or margine in place of the yogurt if you aren't wan't to follow the recipe as strict. Or use real eggs if cholesteral isn't an issue for you. It's a flexible recipe. I sprayed my tins with PAM when I just put the batter directly into the pan.
