Ingredients:Corn Tortillas, 1 tortilla, medium (approx 6" dia)Canned Tomatoes, 2 cupBeans, black, 2 cupGreen Chili Peppers, canned, .5 cupMozzarella Cheese, part skim milk, 1 cCheddar Cheese, 1 cOnions, raw, .25 cup, finely diced
Reserve 1/4 c of a combination of the cheeses. Layer some tomatoes and chilis on the bottom of a sprayed casserole dish. Place three tortillas, then 1/2 of the beans, 1/2 of the cheese, 1/2 the onion, and cover with tomatoes and chilis. Repeat with tortillas, beans, cheese, onion, tomatoes, and chilis. Add three more tortillas to the tops and spread tomatoes and chilis on top. Sprinkle a 1/4 c. cheese on top for looks. Microwave on high for 10 minutes.
