Ingredients
2 medium eggplant, peeled and roastedAbout 1/2 small head garlic, roasted1 medium shallot (can use onion)Small bunch cilantro, finely choppedAbout 1/4 cup Extra Virgin Olive Oil1/8 tsp Cumin (optional)1/4 tsp Greek Spice mix (optional)Salt, to tasteBlack Pepper, to taste
Directions
Preheat oven to 400 degees (200 C). Place foil over baking sheet. Peel and cube eggplant. Peel garlic cloves. Lay eggplant and garlic on baking sheet, salt and pepper as desired. VERY LIGHTLY coat with olive oil to prevent burning. Roast for about 15 minutes, or until lightly roasted. Roughly chop shallot and cilantro and place in food processor. Add Greek spice and cumin, as well as pinch salt and pepper, if desired. (Can also add Tabasco here for an added kick!) Once eggplant/garlic are done, remove from oven and allow to cool down until only slightly warm to the touch. Add to mix in food processor. Cover and begin at very slow speed. Once chopped, gradually add olive oil through feeder tube until nice consistency as desired. Pour into serving dish and serve with lightly toasted pita bread and chopped fresh veggies (cucumbers, tomatoes, celery are my favorites!) If a sweeter flavor is desired, roast the shallot as well... cut into larger pieces and combine on tray with garlic and eggplant.

    This was surprisingly tasty. A new thing to use eggplant! I love eggplant so thought I would try it and we did for our Memorial day party. Nothing came home with us so it must have been liked! - 6/1/21
