Ingredients
Directions
SaltPepper8 ounces Angel Hair pasta1 Tablespoon olive oil8 ounces Large Shrimp (peeled and deveined)2 teaspoons minced garlic1/2 cup Pesto1 cup Halved Cherry tomatoes
Fill a large sauce pan three fourths full of water. bring to a boil and add salt. Add pasta and cook until barely tender. (about 4 minutes) drain the pasta and set aside and reserve 1 cup of the cooking water.
Heat the olive oil in the same pan over medium heat. Add shrimp and cook for one minute turn shrimp over and add garlic. Cook until Shrimp is opaque in the center about 1 minute more. Add the reserved cooking water and pesto. Stir until incorporated. Add the tomatoes and pasta and toss to combine. Salt and pepper to taste. You may add cheese to the top (although it adds calories!)
Recipe says it makes 2 servings but my husband and I found it very filling and we had left overs, so I would say it makes 4.
