Chicken Meat Loaf

Ingredients
Onions, raw, .5 cup, chopped *Peppers, sweet, red, fresh, .5 cup, chopped Carrots, raw, .5 cup, chopped Parsnips, .25 cup slices *Ketchup, Heinz, 2 tbsp *Balsamic Vinegar, 2 tbsp Chicken Breast, no skin, 15.8 ounces Olive Oil, 1 tbsp
Directions
preheat oven to 350 degrees.
Chop chicken breast in processor, or whatever machine you have. Saute veggies in oil till translucent. Add ketchup, and balsamic vinegar. Saute another minute until incorporated. Let cool then mix in to chicken. Place in loaf pan, then in oven. I use the roast setting in my oven. Bake or roast for 30 minutes covered, then uncovered for another 5 minutes. Enjoy!
