Pancakes - Almond and Flax Meal

Ingredients
1/2 cup almond meal1/2 cup ground flax meal2 eggs1/4 cup water (for puffier pancakes, you can use sparkling water)1/4 teaspoon salt1 T sweetener (I used pure maple syrup)2 tsp coconut oil (for cooking)
Directions
Mix ingredients together and let rest for a few minutes. Cook as you would other pancakes. Measure 1/4 cup batter per pancake. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.
