Big Egg Omelet

1 Large Egg with Yolk2 Large Eggs without Yolk (Egg whites only)1 cup chopped kale1/4 cup chopped tomato1/4 cup chopped onion1 oz chopped cheddar 1/2 TBSP Olive Oil
In a bowl, mix together the one egg with yolk with the two egg whites so the yolk is mixed evenly throughout. Set aside.
Now chop up onion, tomato, cheddar cheese, and kale.
In a frying pan, pour in the olive oil and let warm up under low heat.
Now pour your egg into the pan and let the bottom of the egg cook slowly on low heat.
Sprinkle the kale, tomato, onion, and cheddar all over the top.
Let it cook until the bottom is cooked through, then fold egg over to form omelet and allow to finish cooking until all egg is cooked through.
Serving Size: Makes 1 Large Omelet
