scrambled curry tofu

1 block of tofu grated or mashed1/2 cup grated carrot1/4 cup chopped onion1/4 cup quinoa1/4 cup black and green lentils1 tablespoon of curry (add more for taste)1 tablespoon paprika2 tablespoons of mustardPepper and hot sauce/ketchup for finishings and taste.
I run the block through the food processor on grate and grate the carrot at the same time. but that's because I'm lazy! You can mash the tofu easily in a bowl and grate a carrot real quick regular style.
mix all ingredients either in a bowl prior to the pan or straight in the pan. I usually make this after i make hashbrowns and use the oil left over in the pan.
only takes a few minutes for it to warm up.
Serve with toast, cheese if you want and pepper.
