Herb-Roasted Potatoes

Ingredients
400g red potatoes (substitute small yellow potatoes instead; the nutritional informatin is similar)1/2 cup chopped onion1 Tbsp olive oil1/2 tsp sea saltblack pepper, several dashes1/4 tsp dried rosemary1/4 tsp dried thyme
Directions
Oven to 450F.

Cut potatoes into ~1" chunks. In a bowl combine potatoes, onion, salt, pepper, and oil; then spread on a rimmed baking sheet or in a baking dish. Roast for 35 minutes. Remove from oven and sprinkle with rosemary and thyme, tossing to coat. Return to oven and bake another 20 minutes.
