Splenda Applesauce Snack Cake

1/4 cup canola oil3/4 cup + 1 Tablespoon Splenda2 Tablepoons molasses1 large egg3/4 cup unsweetened applesauce1 teaspoon vanilla1 cup all purpose flour1/2 cup whole wheat flour1 teaspoon baking powder3/4 teaspoon baking soda2 teaspoons cinnamon1/2 teaspoon allspice2 teaspoons sugar1/2 teaspoon cinnamon
Preheat oven to 350 F. Spray 8 x 8 pan with coking spray.
In a large mixing bowl, stir together moist ingredients and 3/4 cup Splenda
Sift in flours, baking powder, baking soda, and spices. Stir until smooth.
Spoon batter into prepared pan.
In a small bowl, combine the sugar, 1 Tbsp Splenda, and the 1/2 tsp. cinnamon. Sprinkle evenly over the top of the cake.
Bake for 20 minutes or until the center of the cake springs back when lightly touched.
