Shiitake Mushroom Gravy

Ingredients
120g fresh shiitake mushrooms, chopped fine1 medium onion, diced1/4 cup low-sodium soy sauce1/4 cup cornstarch1/4 tsp dried thyme1/8 tsp dried sage
Directions
1. Fry onion and mushrooms until mushroom juices come out.

2. Add soy sauce and 3 1/2 cups water. Bring to a boil and reduce heat, simmering for 10 minutes.

3. Whisk in the flour and simmer 10 more minutes. Remove from heat and stir in herbs.
