Pear Crisp

3 pears (I used D'Anjou)1 tbsp cornstarch1/3 c brown sugar1 tsp cinnamon1/4 c butter (I used Earth Balance soy butter)1/3 c oatmeal (not instant)1/4 c sliced unsalted almonds
Core pears and slice thinly. (It is not necessary to peel them) In a large bowl, toss pear slices with cornstarch, cinnamon, and 1 tbsp of the brown sugar. Spread in 8x8 glass baking dish sprayed with cooking spray.
In a bowl, combine remaining brown sugar, oats, nuts, and butter. Using a fork or pastry blender, cut butter into mix until everything is combined and crumbly. (butter should be approx. pea size) Evenly spread this mixture on top of pear mixture. Bake at 350 for 20-25, or until topping is browned and pear mixture is bubbly. Makes 6 servings (or 4 if you have the calories to spare!;-))
