Puffy Ham and Cheese Frittata w/green pepper and onion

8 eggs3 oz. ham1/4 c. shredded cheddar1/2 c. chopped green pepper1/2 small onion, choppedsalt & pepper
Spray large skillet with cooking spray. Heat over medium. Combine pepper and onion with salt and pepper. Saute in pan till tender. Turn off heat, add ham and mix to combine. Remove all from pan.
Separate eggs, yolks in one bowl, whites in a separate bowl. Beat whites till frothy but not dry. Set aside. Beat yolks with 1/4 c. water. Fold in to whites. Heat pan over medium heat. Pour egg mixture into pan, top with ham mixture, sprinkle with cheese. Cover and cook over medium heat about 15 minutes or until eggs are set. Cut into 8 wedges.
