1 tbsp EVOO6 oz chicken (cubed)1 tbsp apple cider vinegar1/2 cup chicken broth1 tbsp apricot preserves1 tbsp honey1/2 tbsp poppy seedsCoat pan with EVOO, brown chicken. Add vinegar and chicken broth, let cook down for 5 minutes. Add apricot preserves, honey, and poppy seeds.Serve over rice.
