Stuffed Peppers

Ingredients
Ground beef, lean, 16 ozQuinoa dry, 1 cupSwiss Cheese, 2 slice Sweet peppers (bell), 5 medium (approx 2-3/4" long, 2-1/2Onions, raw, .5 medium Garlic, 5 cloveCarrots, raw, 1 cup, choppedParsley, .5 cupBasil, 2 tbspCilantro
Directions
brown the meat with the onion, garlic and carrots. Cook quinoa. Mix both together - stuff in a hallowed out pepper, top with swiss cheese. Bake at 375 for 20 minutes - longer if you like your pepper mushy, I like it firmer
