Reduced Fat Blueberry Muffins

Ingredients
3/4 cup white flour3/4 cup whole wheat flour2/3 cup sugar (can use less)1/3 cup Splenda1/2 tsp salt2 tsp baking powder1/3-2/3 cup applesauce1/4 cup Egg Beaters1/3 cup 1% milk (or skim)2 pints blueberries (can use 1 pint)
Directions
Preheat oven to 400 degrees.
Spray muffin tin with Pam or line with muffin liners.
Combine flour, sugar, Splenda, salt and baking powder.
Add egg, milk and applesauce, mix well.
Add blueberries and gently fold in.
Spoon into muffin tins and bake for 20-25 mins.
Check for doneness with a toothpick that comes out clean.

    While small and not that fluffy, they were pretty good. I used an egg because I didn't have egg beaters at the time and I also used all Splenda, no sugar. A nice quick breakfast to go. - 8/7/15
