Whole Wheat Lemon Zuchinni Muffins

Ingredients
1 1/2 cup whole wheat pastry flour1/4 cup sugar2 tsp cinnamon1/2 tsp nutmeg1 tsp baking powder1 tsp baking soda1/4 tsp salt1 1/2 cups unsweet applesauce2 cups shredded zuchinni1/4 cup unsweet vanilla almond milk2 tbs fresh lemon juice2 tsp lemon zest 6 tbs flax seed ground
Directions
Preheat over to 350 degrees. Spoon mixture into non stick or sprayed muffin tin pans. Sprinkle with oats or flax seed for texture. Bake 25 min or until toothpick comes out clean. Let cool before removing. I also use muffin liners and they worked great too!
