Banana Bread for 2 (courtesy of Cape Fear Pottery) (gluten free)

Ingredients
1/4 cup of coconut oil1/4 cup of sugar1 cup of gluten free multi-purpose flour1/2 tsp of Xanthan Gum (b/c I used GF flour)2 tbsp of low fat Buttermilk2 mashed bananas (the riper the better!!)1 egg1/4 tsp baking sodadash of salt1 tsp vanilla extract
Directions
Mix coconut oil and sugar together well in a mixing bowl.
Add egg, buttermilk, baking soda, salt, and vanilla extract.
Stir mixture well.
Add flour, banana.
Mix thoroughly until smooth.
Grease bundt pan and lightly flour or use a cooking spray.
PLACE BUNDT POTTERY PAN INTO COLD OVEN AND SET TEMP TO 350.
Bake for 45 min.
