Paleo tuna salad cucumber sandwiches

Ingredients
1 cucumber1 small can of tuna (i like water packed)handful of grapes (about 1/2 a cup)1 oz of walnuts1/4 of an avocado1 hard boiled egg
Directions
cut cucumber into half and then cut the halves in half so you have 4 pieces of cucumber. Carve out some of the seeds to make room for the tuna salad. Put cucumber aside for now.

chop grapes and walnuts and add them to tuna. Mix in avocado and tuna and mash together.





Serving Size: makes 6-8 cucumber boats
