Roasted Eggplant Hummus

Ingredients
1/2 Cup Chopped onion1 Cup Cubed Eggplant1 oz sesame seeds1 Cup Chick Peas (cooked)1 tsp Garlic Powder2 Tbsp Lemon Juice
Directions
Place onion and eggplant on baking sheet. Roast in oven at 400* for 10-15 minutes, until vegetables are soft. In last 3-4 minutes, add sesame seeds to roast.

In blender or food processor, combine chickpeas, lemon juice, garlic powder, sesame seeds and roasted vegetables. Blend until combined.

Serving Size: Makes 4 1/2 Cup servings.
