4 oz. lean ground beef, browned1/2c. OnionsPumpkin flesh - 2 cups1/2 granny smith apple! Chopped1/2 c. Unsweetened apple juice (or white wine but adjust nutrition info)1 c. Cooked brown rice1/4 c.dried cranberries1 T. Olive oil1 t. Ground thyme1 t. Fresh oregano,or .25 t. DriedSalt & pepper to taste
Brown meat, remove from skillet! Increase heat to med. and add onion and 2 c.pumpkin meat. Cook until pumpkin softens, about 5-7 min. Add apple and meat,cook 5 min. Add juice or wine, cook for 2 min. Combine rice and remaining ingredients, add to meat mix. Place in hollowed out pumpkin. Cover w/foil & bake @ 350 degrees for 25 min. Remove foil and cook 10 min. longer.
