Cucumber Tomato Garbanzo Salad

Ingredients
2 cucumbers, peeled and cubed2 medium tomatoes (I use the big vine ripened ones, if you use Roma, go for 3, or about two cups)1 cup shredded mozzarella2 cups prepared garbanzo beans1/2 cup fat free italian dressing
Directions
Garbanzo beans can by cooked from dry or canned. I cook mine, so if you make them from dry, ensure you cook them ahead of time and that they have chilled.

Combine all ingredients. Serve cold.
