Smoke Sausage Soup

16 oz smoked sausage, diced80-100 oz water3 stalks celery chopped1 small onion, chopped1 cup frozen peas8-10 baby carrots, chopped200 grams red potatoes1-2 bay leavesseason to taste(I use garlic pepper and whatever else strikes my fancy on any given day. The veggies that go in vary as well, depending on what I have on hand and my mood)
Add sausage to the water along with bay leaf and seasonings. Add onion. Add carrots and potatoes first as they will take longer to cook. After they are about half cooked add the celery. Add the peas last. Simmer till veggies are cooked through.
I do not have exact cooking times. I have always done this by sight and taste. I had to guesstimate ingredients as well. So adjust them to your own preferences. I typically use chicken bouillon but it is extremely high in sodium so I left it out of this recipe.
