Stuffed Peppers - Vegan

Ingredients
3 yellow or green bell peppers, sliced the long way, seeds and veins removed1 medium tomato, chopped1 small onion, chopped1 small can mex corn1 stalk celery, chopped1 T. worcestershire sauce1 tsp. basil1 tsp oreganocourse ground pepper4 oz cottage cheese, if desired
Directions
Spray casserole dish with olive oil. Lay pepper halves in bottom. Set aside.
Combine tomato, onion, corn, celery, spices and half the cheese in small bowl. Mix well. Spoon into and over peppers. Bake 400 covered for 15 minutes.

Serving Size: 1/2 pepper = 1 serving. Serves 6
