Steve's Basic Baked Penne

112g penne (preferably whole wheat)2 Tbsp panko bread crumbs1 cup diced tomatoes1/2 cup tomato paste1/2 medium onion, diced1 clove of garlic, minced1 tsp olive oildried basil, oregano, and thymesalt & pepperwater
1. Sauce
Dice onion, mince garlic. Heat oil over medium heat, add onion, and sweat. Add garlic and cook an extra 2 minutes. Add tomato paste and blend. Add diced tomatoes and about 1/2 cup water. Add about 1 tsp each of basil, oregano, and thyme. Stir until smooth, bring to a simmer, and cook uncovered about ten minutes.
2. Pasta
Meanwhile bring 2 quarts salted water to a boil. Add pasta and take off the heat *before* the pasta is al dente, probably about 8 minutes. Run under cold water to stop the pasta from cooking.
3. Baking
Preheat oven to 350F. Stir pasta into sauce and blend until the pasta is well coated. Then portion the pasta into six 3/4 cup ramekins or custard cups. Sprinkle panko / bread crumbs on top. Bake covered (with foil) for about 30 minutes. Remove foil and cook another 5 minutes. Turn on the broiler and brown the tops, probably ~3 minutes.
