Vegetarian Gratin

4 cups broccoli tops1.5 cup cauliflower tops4 tbsp unsalted butter1 small onion, diced1/4 cup flour1 cup milk1 cup half and half6 slices of muenster cheese1/4 cup parmesan cheese
1. Preheat oven to 350
2. Blanch vegetables individually
3. Melt 1 tbsp of butter. Add onion and Garlic. Sweat for about 5 minutes
4. Add the rest (3 tbsp) of butter and melt. Add flour and cook until there's no longer a flour smell (about one minute)
5. Add milk and stir until thick enough to cover the back of a spoon.
6. Turn off heat and add cheese. Salt and Pepper to taste.
7. Mix veggies and sauce together, put in baking pan. Sprinkle with parmesan cheese.
8. Bake for roughly 30 minutes, or until nice and bubbly and the cheese is brown.
