Breakfast Potatoes (Bill Miller Style)

2 Potato, raw, medium1 tbsp Olive Oil 0.5 cup Onions, raw, chopped1 clove GarlicSalt, 1 dash Pepper, black, 1 tspWater, tap, 1 fl oz
Cut potato into 1 inch cubes and chop or mince garlic (chopped is my preference)
heat olive oil over medium heat.
add chopped onion and cook until transparent.
Gently place potato's on top on onions and minced garlic on top of potato's add salt and pepper.
Cover and cook for 5 min.
Stir and add 2 Tbsp of water and cover and cook for 5 min.
Stir add 1 tbsp water cover and cook 5 more min.
Uncover and using spatula or spoon chop potatoes to achieve mashed/chopped/cubed mixture.
Serving Size: 2 1 cup servings
