Creamy Cauliflower Puree

Ingredients
1 head of cauliflower2T heavy cream1T butter2oz Dubliner or other sharp cheesesalt and pepper to taste
Directions
Clean and trim cauliflower into medium sized pieces. Place in microwave safe bowl with cream and butter. Microwave, uncovered, for 5 minutes. Stir to coat cauliflower with cream/butter mixture. Microwave for another 4 minutes.
Remove and put into food process with cheese. Puree until smooth (several minutes). Season with salt and pepper to taste.
