Ingredients
2 T. finely chopped onion1 T. finely chopped Jalapeno3 egg whites1/4 c. shredded cheddar cheese1 8-in. whole wheat tortilla2 T. salsa
Directions
Heat saute pan over medium-high heat. Add onion and jalapeno; cook until softened, about 5 min. Add eggs; cook 1-2 minutes or until soft-set. Remove from heat; add cheese and stir gently until melted.

Spoon egg mixture over tortilla. Top with salsa and roll up.
