Calabacitas y Queso

Ingredients
1 small yellow onion-chopped up1 tbsp. olive oil3 or 4 zucchini's- cut in half lengthwise, then slice1 serrano chili (Anaheim chilis work well too if serrano's are too hot)diced- remove seeds3 oz. Queso Blanco- or colby jack cheese
Directions
Heat oil in a nonstick pan over medium heat.
Add onions, wait about 2 minutes or so, until they are soft, but not brown.
Add zucchini and chili peppers. Stir around a bit, until onions are kinda brown, and zucchini is tender and slighty roasted, you may add a few tbsp.'s of water to get them to soften faster. Make sure all water is evaporated, then add cheese.
This makes about 4 servings.
I like to eat them wrapped up in a tortilla with a slice of avocado and some salsa, or mixed in with some brown rice and salsa. Fyi- avocado and tortilla nutritional info is not included.
*This dish is messy, and even better the next day.
I also think it makes a mighty fine omelette filling too.
