Neely's Cream Corn

8 ears of corn1 cup heavy cream or half and half2 tbsp bacon grease1/2 cup cold water2 tbsp sugar1 tbsp all purpose floursaltpepperbutter
-Shuck, wash and remove all silk from 8 ears of corn
-place a small bowl upside down in a larger bowl and using a pairing knife to cut the corn off the cob (sit the cob on the smaller bowl to make cutting easier)
-with the back of the knife, run along the cob to release the sweet milk
-whisk together sugar, flour, salt, pepper
-add to the corn along with water and cream
Add bacon grease in a large skillet and cook corn mixture on medium-low heat for 30 minutes or until tender.
Serving Size: makes 6 /12 cup servings
