No Bake Manicotti

Ingredients
12 oz shredded mozzarella cheese (part skim)1-15 oz container ricotta cheese (part skim)3 tbsp grated Parmesan cheese1 egg (slightly beaten)1 tsp sugar1 tbsp chopped fresh parsley3 dashes black pepper14 manicotti shells (1 box)4 c spaghetti sauce
Directions
Combine cheeses (only 8 ozs of the mozzarella) egg, parsley (chopped), pepper, and sugar in a bowl and mix well.

Combine sauce and about 1/2 c water. Spoon about 1/2 the mixture into the bottom of a baking dish. Fill shells with the filling and place shells in the pan. Cover with rest of sauce. Sprinkle the rest of the mozzarella cheese on top. Cover with aluminum foil and bake at 400 for 40 minutes. Then remove foil and continuue baking for an additional 10 minutes. Let sit for 10 minutes and serve.
