Ingredients
3/4 cup salsa4- 4oz chicken breasts6 tbsp light cream cheese1/2 (1 oz) Finely shredded Cabot 75% Light Cheddar cheese
Directions
Preheat the oven to 350 Degrees. Spread 1/3 cup of the salsa in the bottom of a 13"x9" baking dish. Set aside.

Lay chicken breasts on a cutting board. Use the flat side of a meat mallet to pound the chicken breasts to a uniform thickness.

Spread the chicken evenly with the cream cheese. Lay the chicken cream cheese up, in a single layer in the prepared baking dish. Spoon the remaining salsa evenly ove the breasts. Cover with tin foil.

Bake for 15 minutes. Remove the tin foil. Sprinkle the cheddar cheese evenly over the breasts. Bake, uncovered, for 15 minutes or until no longer pink. Serve immediately.

    I made this after a friend posted it on facebook and it was a instant success. Its a very simple recipe, my only suggestion was to use the whipped cream cheese, its easier to spread over the chicken breasts and its lower in calories as well. My boyfriend begs me to make this recipe and hes picky! - 4/1/10

    This a very yummy and easy chicken dish. My whole family loved it! We will make it again and again. This makes alot of sauce so we served it over brown rice. Very Good! - 1/22/09
