Sweet Potato Casserole

Ingredients
2 2/3 c. sweet potato(baked in skin first)1 egg1/3 c. splenda2 t. butter1/3 c. milk1 t. vanilla2 t. cinnamon1 T. packed brown sugar
Directions
Bake large sweet potato, in skin, fat 350 or 1 hour or until skin pops. Let cool enough to remove skin and mash. Add everything except brown sugar, mixing well. Transfer to greased baking dish. Smooth top and sprinkle with brown sugar. Bake for 30 minutes or until brown sugar has crystalized on top.

    It may take several potatoes to get the 2 & 2/3 cup of mashed potatoes. This was very yummy. No splenda taste at all. - 12/8/09
