Ingredients

2tbsp Olive oil2 cloves garlic, minced1 medium onion, chopped3 stalks celery, chopped3/4 C chopped carrots2 lbs pork loin roast precooked and cubed1 29oz can hominy, rinsed2 4oz cans green chilies2 tbsp ground cumin32 oz Chicken broth2 tbsp chipotle in adobe sauce, chopped1 6oz container plain, non-fat greek yogurt
sweat garlic and onions in olive oil for 5-8minutes
add celery and carrots for 5 minutes
Add pork and cumin, toss to combine.
Add chilies, hominy, chipotle and broth
Bring to a boil, then reduce to simmer and cover for 30 minutes. Turn off heat and let sit up to 2 hours
Before serving, bring to medium temp, stir in yogurt.
Serve with chopped cilantro and shredded cheese on top (optional)
