Braised Kale

Ingredients
1 pound fresh kale, chopped2 medium onions, chopped3 cloves garlic, minced1 quart whole canned tomatoes (home canned preferred)2 tbsp extra virgin olive oilsalt and pepper to taste
Directions
Heat 2 Tbsp Olive Oil in pan over medium heat.

Chop turkey bacon and add to oil, cook until brown.

Add chopped onions and garlic, cook until onions soften and begin to brown.

Add kale and cook until slightly wilted.

Crush whole tomatoes with your hand and add to kale with tomato liquid. Cover and cook for 1 hour, stirring occasionally. Adjust heat to just simmer.

Serving Size: makes 8 1-cup servings
