Kale and Avocado salad from Whole foods

Ingredients
2 lbs chopped kale1/2 lb (8oz) red onion sliced thinly3 avocado (reserve one and chop)3 peeled lemons2 tsp salt2 tsp black pepper
Directions
Put washed Kale in a huge bowl. Puree 2 avocados, lemons ,and salt and pepper. adj to taste. (may need to add a little water to thin),Chop one avocado and thinly slice the red onion. Add pureed "dressing" and onion to kale. mix with your hands to coat all kale massaging to soften greens. next add the chopped avocado and chill. tastes great the next day too!
