Green Chicken Chili

Directions
1 medium onion, chopped1-1/2 cups cooked chopped light meat chicken2 cans chopped green chilies3-1/4 cups green enchilada sauce or salsa verde2 cups pinto beans, soaked over night3 cups water1 tbsp chili powder1-1/2 tsp ground cumin1 tsp salt1/2 tsp black pepper
Saute onion and chicken with seasonings until onion is tender.
Add beans, chilies, enchilada sauce and water.
Boil until beans are tender.
If desired this soup is wonderful served with a bit of crushed tortilla chips and shredded cheddar cheese on top.

easy and delicious. I used two cans of beans (one red kidney and one black), and added a can of corn (all rinsed and drained) and a can of diced tomatoes (with liquid). to make up for the extra volume, I used two jars (16oz each) of salsa verde (an extra 3/4 cup), and didn't need to add any water. - 9/23/08

HUGMONKEYMOM
I used a mild salsa verde and omitted the chilis so my toddler could eat it. It was good, but I felt it was lacking something. Crushed tortilla chips may have been the answer, but I didn't have any. I will probably make it again and play with some changes because I think it has promise. - 9/14/09
