Elk or Moose Stew

Ingredients
2 lbs Elk or Moose Meat - cubed1 Tbsp Olive Oil1 C Chopped Onion1 C Diced Celery1 1/2 C Chopped Carrots2 medium Potatoes, cubed3 Tbsp Flour1 - 19oz can diced Tomatoes1 tsp Salt1/2 tsp Pepper1/2 tsp Oregano1 tsp Paprika
Directions
Brown meat in oil, remove from pan. Add onion, celery & carrots, cook until onion is transparent. Blend in flour, add tomatoes, bring to a boil stirring constantly. Add meat, potatoes and remaining ingredients. Cover & simmer until meat is tender (1-1 1/2 hrs) or bake (covered) at 350 degrees for 1 1/2 - 2 hrs. Serves 8.
