BBQ Chicken Cauliflower Crust Pizza

Ingredients
1/2 head (approx. 1.5 cups) cauliflower, grated1/2 cup (45 grams) grated cheese1 egg1 tsp garlic powder1 tsp onion powder2 tsp Italian seasoning1/4 boneless skinless chicken breast1 small white onion2 tbsp minced garlic1/4 cup sweet yellow corn4 cherry tomatoes1/3 cup (30 grams) grated cheese
Directions
1. Grate the cauliflower into a microwave safe bowl. Microwave on high for 7 minutes. Allow to cool slightly.

2. Add 1/2 cup cheese, egg, and spices. Mix into a dough-like consistency then spread out on a pizza pan. Bake at 400 degrees for 15 minutes or until golden brown and crispy along the edges.

3. Bake chicken on a separate baking sheet in oven at 400 degrees for about 15 minutes.

4. Cut the onions into thin rings and caramelize on med-high heat with 2 tbsp of minced garlic and 1/4 cup water.

5. When the chicken is mostly cooked (can still be pink in the center) take it out of the oven and cut into thin strips. Add to frying pan along with 2 tbsp water. Fry with onions until thoroughly cooked.

3. Remove the cauliflower crust from the oven. When the chicken and onion mixture is ready, you may add your toppings to the pizza. Finish with 1/3 cup grated cheese.

4. Bake at 400 degrees for about 10 minutes or until desired crispiness and meltiness is met.
